Tofu bhurji is the vegan answer to paneer or egg bhurji, and it is usually a little lighter for the same protein. It is quick, high in protein, low in carbs, and takes vegetables and spices well.

A pinch of black salt gives it a familiar egg-like flavour if you want it. Serve with a single roti and salad, or on its own as a low-carb plate.

Ingredients

  • 200 g firm tofu (crumbled)
  • 1 small onion (finely chopped)
  • 1 small tomato (finely chopped)
  • 1 tsp ginger-garlic
  • to taste turmeric, red chilli, salt
  • 2 tsp oil
  • 2 tbsp coriander leaves (to finish)

Instructions

  1. Prep the tofu. Press the tofu to remove excess water, then crumble it.
  2. Build the base. Heat the oil and saute the onion and ginger-garlic until soft.
  3. Cook the masala. Add the tomato and spices and cook until the tomato softens.
  4. Add the tofu. Add the crumbled tofu, toss for 3-4 minutes until heated through, finish with coriander, and serve.
