  • 4 cups mixed vegetables (carrot, beans, cabbage, peas, capsicum)
  • 1 small + 3 cloves onion and garlic (chopped)
  • 4 cups vegetable stock or water
  • to taste pepper, herbs, salt
  • 1 tsp oil
  • to finish lemon juice

Instructions

  1. Build the base. Heat the oil and saute the onion and garlic until soft.
  2. Add the vegetables. Add the vegetables and stir for a couple of minutes.
  3. Simmer the soup. Add the stock or water, season, and simmer until the vegetables are just tender, about 12 minutes.
  4. Finish and serve. Finish with pepper and a squeeze of lemon. Serve as is, or blend for a smooth soup.
