  • 1.5 cups poha (flattened rice) (thick variety, rinsed)
  • 1 small onion (chopped)
  • 1 cup mixed vegetables (peas, carrot, capsicum)
  • 2 tbsp peanuts

  • 1 green chilli (optional)
  • 2 tsp oil

  3. Add the onion and vegetables with turmeric and salt, and cook until just tender.
  4. Fold in the drained poha gently, warm through, and finish with lemon juice and coriander.
